{October 23, 2012}   Canning 2012- APPLES

I got some Gala apples and some Winesap apples at the farmer’s market last week. A half peck of each- total of $12 worth of apples.

I made some into applesauce and some into chips.  Here is the applesauce process:

1. Peel, core, and chop the apples into cubes. (I did 12-14 apples per crock pot batch).

2. Add juice of one lime, up to 1/3 cup of sugar (I did half white and half brown sugar this time) * you can also omit sugar completely, and add a tablespoon or so of cinnamon if desired.

3. Cook in crock pot on low for about 6 hours.

4. Combine all crock pot loads into a large bowl.

5. Puree with a stick blender for smooth applesauce.

6. Put into sanitized jars.

7. Process in water canner for 15 minutes.

8. Label jars with contents and date.

26 apples = 5 pints of cinnamon applesauce

 

I used about 2/3 of the apples for the applesauce ($8), so the cost per pint is approximately $1.60 per pint.

The rest of the apples have been/are being made into apple chips.

1. Slice them at 1/4 inch thickness on the mandolin.

2. Remove any seeds.

3. Sprinkle with cinnamon sugar. (I find they are BORING without a little cinnamon)

4. Dry in dehydrator for about 12 hrs. Or dry in oven on 300 checking each 15-20 minutes for crispiness (Total is usually a couple hours).

I came out with about 3 sandwich bags worth of apple chips total.  ($4 of apples).  Making it about $1.33 per bag.

{September 15, 2012}   Cane Creek Farm Store 9/15

Had a kind of light week as far as using things up completely last week, so this week, I decided to skip the farmer’s market and head to the Cane Creek Farm store.  Multiple reasons: One is that Einstein could come with me and get out of the house for a little bit. Two is I know Bobby trades stuff for citrus sometimes, and I needed a couple of lemons for Ginger Ale 3.0.  Three is that there is always a wheel of Hoop cheese and you can get a chunk cut off of whatever size you like.

I paid a total of $27.80.  Here’s what I got:

2 acorn squashes, one other winter squash that I dont now its name, 2 red onions, 1 bulb of garlic, 2 oranges, 2 lemons, 2 red bell peppers, 2 gala apples (best type ever), 1 POUND of hoop cheese, and a bottle of 5 pepper hot sauce.

It’s going to be another yummy week- I am sure of it!

 

 



So it seems that fall is making an early appearance here in Carrboro. It was chilly this morning when I headed out to the Chapel Hill Farmer’s Market.  First thing I saw were some pumpkins of various sizes! That is a sure sign that Fall is fast approaching! Hooray- Fall is my favorite season. Not only because of pumpkin everything, but also because not being hot the minute you walk out the door makes me much more likely to spend more time outside and moving and less time on the computer or watching movies.

Anyways, here is what I obtained on this early fall morning (which was not really so early since I went to Chapel Hill and didn’t have to be there at 7 AM to get delicious options).

Early Fall Finds

Shishito peppers and juliette tomatoes: $6

Peppers and okra: $6

Garlic and shiitake mushrooms: $4.90

Fig Honey Chevre, Spicy Pimento Goat Cheese and Mozzarella: $13 (Got a dollar off for getting 2 spreadable cheeses-oh darn!)

Gala apples and muscadine grapes: $3

Edamame: $2

 

Grand Total: $34.90

 

Seeing the pumpkins made me decide to go check on the ones we had growing at the Love Chapel Hill Garden at Merritt’s Grill.  It’s kind of more like a jungle than a garden and I’ve been slacking on checking on it since we’ve gotten so much rain.  But anyways, I should not slack so much cuz here is what I found:

3 pumpkins (the plants were dead but these 3 pumpkins look pretty happy), 1 mini orange watermelon and 5 big cucumbers! That’s probably at least $15 worth of produce!
